Considered one of the most important food crops in the world, cereal grains account for roughly half the protein and energy consumed by humans worldwide, according to the Food and Agriculture Organization of the United Nations. In addition to essential vitamins and minerals, whole cereal grains are rich in fiber and are associated with a reduced risk for chronic diseases.
Cereal grains are the fruit of plants in the grass family and include wheat, rice, maize, barley, oats and rye. The seed, or kernel, of the whole cereal grain consists of the bran, the germ and the endosperm. A protective outer layer, the bran contains antioxidants, B vitamins and fiber. The germ houses healthy fats, protein, vitamins and minerals, and will sprout into a new plant when fertilized. Food supply to the germ, the endosperm includes carbohydrate, protein and some vitamins and minerals. When grains are refined, the bran and germ are removed along with much of the protein and other nutrients.
